Ingredients for the Paneer Tikka Marinade

S no.  Ingredients  Quantity
1 Ajwain (carom seeds) 1/4 Tsp
2 Tomato paste 1 Tsp
3 Red chili powder 1 Tsp
4 Ginger garlic paste 1 Tsp
5 coriander powder 1 Tsp
6 Cumic Powder 1/2 Tsp
7 Besan(Gram flour) 2 Tsp
8 Turmeric 1/2 Tsp
9 Kasuri methi(Dried fenugreek) 1/4 Tsp
10 Black Salt(Kala namak) 1/4 Tsp
11 Chaat Masala 1/2 Tsp
12 Black Pepper 1/4 Tsp
13 Yogurt 1/2 cup
14 Paneer 200 gm
15 Tomato(in slice) 1 pice
16 Onion 1 pice
17 Capsicum 1 pice
18 Mustard Oil(Smoking hot oil) 1 Tsp



How to cook the Paneer tikka Marinade

Step no.  Process
Step-1 Lets began with the paneer tikka marinade.

All Spices
Mix the all the spices given in list with Smoking hot mustard oil.

See the size of paneer and others
Then add a paneer,tomato,capsicum and onion with the tikka marinade paste.(Panner cubes are small or medium in size)
Step-4 After that, Cover and refrigerate for 2-3 hours. Lesser is also fine.
Step-5 After 2-3 hours, Paneer marinade is done.

Marinade Paneer Masala
Step-6 Then cook the marinade panner on nonstick pan without oil / Butter
Step-7 Keep flipping it around every few minutes till the masala is cooked and slightly dried out.
Step-8 When it's almost done, toss in some fresh corinder leaves.

How to make Rumali Roti for Paneer Roll

Step no.  Process
Step-1 To make the whole wheat rumali roti for tha kati  rolls,mix whaet flour and salt.
Use the whey leftover form making paneer to form a soft dough.The whey is rich in protin and will make the soft and elastic,thats will help make super thin rotis.
Step-3 You know the roti is thin enough when you'r able to see uour rolling board through it without having it tear.
Step-4 If you dont have paneer  whey protein, you can use 50% maida to get that streach in your dough.
Step-5 Slam the roti on a hot pan and cook it by gently pressing it with a clean napkin
Step-6 When bubble appear, flip it and cook on the other side similarly.
Step-7 And it's done.Dont keep it on for long time else it'll get crispy and become a karkara.
Step-8 Stack the hot rotis under kitchen towel to keep them soft and prevent any condensation.
Step-9 Rumali roti for Paneer Tikka Kati Roll is done.

Ingredients for Mint Chutney

S no.  Ingredients  Quantity
1 Mint leaves 1/2 cup
2 Coriander 1/4 cup
3 Green chili 1 Pice
4 Garlic 1 clove
5 Yogurt 2 Tsp
6 Ice cubes 2-3 Tsp
7 Lemon as per taste

How to make Mint Chutney

Step no.  Process
Step-1 Add all the spices given in the list such as mint leaves,coriander leaves,green chili,yogurt,garlicand ice cude  in a blender Jar.
Step-2 Add salt and lemon as per taste.
Step-3 Blend everything together till smooth paste.
Step-4 Mint Chutney is Ready.

How to ready a Pickled Onions(Optional)

Pickled onions for the kati roll because I cannot stand raw onion.
Step no.  Process
Step-1 Add 1/4Tsp vinegar(Or Lemon),a pinched of salt, a suger, red chili,dry mint.
Step-2 Mix,cover and refrigerat for 1-2 hour toremove that rawness from onions.
Step-3 After 1-2 Hour Pickled Onion is Done.
