Dhokla Recipe- Indian Style | Homemade dhokla recipe.

Hey Foodie, I know that you all excited to know the Dhokla recipe.
We all know, how soft Dhokla In every bite of Dhokla, there could be a different taste of different Ingredients. Today we might cook Dhokla and tell you the different ingredients. Don’t worry I also provide you the different tips and tricks which will help you to cook Soft and fluffy Dhokla.Let's Start with the ingredient.

For Batter:

Sno. Ingredients Quantity
1 Gram Flour (Besan/Chickpea Flour)  1 cup 
2 Semolina (rava/sooji)  1Tbs
3 Lemon juice  1½ Tbs
4 Eno Fruit Salt   1Tbs
5 Green Chilli-Ginger paste   1Tbs
6  Water  3/4 cup
7  Curd (yogurt)  1/4 cup
8 Oil  1Tbs
9 Salt  as per taste

For Tempering:

1 Oil  2Tbs
2 Curry Leaves  10-15
3 Mustard Seeds  1/2Tbs
4 Cumin Seeds (optional)  1/2Tbs
5  Sesame Seeds (til)  1Tbs
6 Sugar  1Tbs
7 Green Chillies  4-5
8 chopped Coriander Leaves  2Tbs
9 grated Fresh Coconut  2Tbs
10 Asafoetida (hing) 1 pinch
11 Water 1/3 cup

Steps to Make Dhokla

      1. Gather all the incredients mention in the list.
      2. Pour approx. 3-4 cups water in steamer/(idli utinsil) at bottom and heat it over medium flame.  Grease a small plates or thalis using 1-teaspoon oil.
      3. Take gram flour, semolina, lemon juice, green chilli-ginger paste, curd,  water and salt in a bowl(according to the quantity mention in the list). Mix them properly make smooth batter( must have no lumps in the batter)
      4. Add fruit salt(ENO) in batter and stir in one direction for approx 1-2 minutes(Sixe of batter will increase after stiring the ENO in a batter)

      5. Now, pour batter immediately into  greased plate and fill it upto 1/2-inch thickness.(not more than that because it will increase and more fluffy).
      6. Place plates in steamer and steam for 8-10 minutes over medium flame.
      7. After 10-12 minutes, insert a knife  into dhokla and check if it comes out clean then dhokla is ready otherwise cook 2-3 minutes more.
      8. Dhokla is ready.

Steps to Tempering

        1. Put the dhokla plate out of steamer and let them cool for few minutes. Then cut the Dhokla from its edges of the plate and put the dhokla from plate.Cut fluffy  dhokla into small squares.

        1. Heatthe oil in a small pan . Add mustard seeds and asafoetida. When seeds begin to crackle, add cumin seeds, sesame seeds, curry leaves and green chillies, saute them for few seconds.
        2. Add water and sugar and bring it to boil.let it cook for a minute over high flame. Tempering is ready, pour it over dhoklas and toss gently until each dhokla is coated well with tempering.
        3. Garnish with chopped coriander leaves and grated coconut and serve with green coriander chutney.
